Immerse yourself in gourmet dining experiences, tasting such delights as the freshest oysters, crayfish and salmon, farmhouse cheeses and flavoursome beers. Traverse one of the last great wilderness areas on earth, including Cradle Mountain and Gordon River. Day 1: Arrive Launceston, St Helens, St Columba Falls
Join a morning flight to Launceston, arriving before midday. Sample delicious local cheeses at the Pyengana Cheese Factory. Stroll past a forest of huge tree ferns, sassafras and myrtle trees to discover St Columba Falls plunging 90 metres down a mountain side. Walk through the filtering light of the rainforest to one of Tasmania's highest and prettiest falls. Enjoy a Welcome Dinner tonight.

Day 2: Bay of Fires, Freycinet Walks, Adventure Options
Visit Binalong Bay Lookout with great views of the famous Bay of Fires, voted one of the best beaches in Tasmania. Choose from a number of easy or active walks within Freycinet National Park such as a guided walk to Wineglass Bay Lookout and then perhaps walk down to the beach which was voted one of the top 10 beaches in the world.

Day 3: Richmond, Hobart
Discover Australia's history in the well-preserved heritage towns of Richmond and Ross, where many convict-built buildings and bridges still stand proud. Enjoy our Freedom of Choice Touring in Hobart – let your guide show you historical Hobart on a walk that includes Franklin Square, the Tasman Monument and Salamanca Place or get a chocolate fix on the Cadbury's Chocolate Factory tour. Where you dine tonight is up to you – choose from three dining experiences within the Wrest Point Casino Hotel. Pier One is known for its selection of Tassmanian produce and gourmet wood-fired pizzas. The Point Revolving Restaurant has modern cuisine with wonderful views over Hobart. Anchors Bistro offers an extensive menu of delicious traditional meals.

Day 4: Hobart
Choose from a Port Arthur tour, discovering the convict past of this Heritage Site, and combine it with gourmet indulgences. Either taste berries at the Sorrell Fruit Farm or shuck and slurp oysters at the Barilla Bay Oyster Farm. Or you can upgrade to an Adventure Option – a Bruny Island cruise. From historic Adventure Bay, journey around stunning Fluted Cape to cruise alongside Australia's highest sea cliff. Discover the remote coastline off South Bruny Island National Park, including deep sea caves, 'breathing' rock and towering crags, with the chance to zoom between the coast and Monumental Rock.

Day 5: Russell Falls, Lake St Clair, Strahan
Walk through dappled rainforest to the tiered waterfall of Russell Falls in Mt Field National Park, one of Tasmania's most treasured places. Visit 'Something Wild' for an interactive experience with Tasmania's wildlife – you might even spot a platypus in the wild. View the beautiful glacier-carved Lake St Clair, part of the World Heritage Cradle Mountain-Lake St Clair National Park. Experience Strahan on Tasmania's wild west coast. This evening, taste the sensational buffet dinner and perhaps see 'The Ship That Never Was' performance (own expense).

Day 6: Gordon River Cruise, Cradle Mountain
Experience gliding over the deep, dark waters of the Gordon River on one of the world's best cruises. Slide past untouched wilderness, given World Heritage status when public outcry prevented the region being drowned by the damming of the Franklin River. Take a rainforest walk along a short boardwalk to see ancient Huon pines at Heritage Landing. For a chilling insight into the harsh conditions of convict life, explore the infamous penal settlement ruins at Sarah Island Historic Site in the remote regions of Macquarie Harbour.

Two Night Stay: Cradle Mountain Lodge, individual Pencil Pine Cabins. Each cabin has commanding views of the bushland, with modern furnishing and a private balcony.
Day 7: Freedom of Choice Touring™ Cradle Mountain
Tour with a local guide to Dove Lake. Relish the opportunity to walk the boardwalk completely around Dove Lake at your own leisure. You have the whole day to be as relaxed or active as you like. Explore the alpine landscapes on a number of guided or unguided walks from Cradle Mountain Lodge and discover the beauty of the park. Or perhaps choose from Freedom of Choice options such as a wine and cheese tasting, seeing the native animals on a Night Spotlight Tour, learning about the local wildlife on a guided Alpine Flora and Fauna Walk or indulging with a treatment at the Waldheim Alpine Spa (Night Spotlight Tour has limited availability). Dine in the fine surrounds of the Lodge, sampling delicious Tasmanian produce.

Day 8: Sheffield, Winery Lunch, Cataract Gorge
Explore the town of Sheffield, known for its murals, which were painted by local artists and depict pastoral scenes. Visit historic Westbury with its English country character. Enjoy a delicious lunch in the heart of the world-renowned wine producing region of the Tamar Valley at Strathlynn, part of Pipers Brook Winery. The restaurant is considered one of Tasmania's most picturesque eating spots, with both the chef and cuisine being among Tasmania's best. Walk off a delicious gourmet lunch at Cataract Gorge, a short distance from the centre of Launceston, with views on to South Esk River.
